Stuffed Pepper Cups

Ingredients

  • 6 medium green bell peppers
  • 1 lb ground beef
  • .33 cup chopped onion
  • 2 cups stewed tomatoes
  • 1.5 cup cooked Cajun Country Rice
  • 1 tbsp Worcestershire sauce
  • 1.5 cup shredded cheddar cheese (separated)
  • salt & pepper

Instructions

  • Cut green peppers in half lengthwise. Remove top stem, seeds and membranes. Boil pepper cups in boiling salted water for 5 minutes, drain and set aside.
  • Brown ground meat and onion.
  • Add tomatoes, Cajun Country Rice, Worcestershire sauce, 1 cup cheese and salt and pepper to taste.
  • Cook about 5 minutes until mixture is hot and cheese is melted.
  • Stuff pepper cups with rice mixture, place in a 9 x 13 casserole dish and sprinkle pepper cups with the remaining ½ cup cheese.
  • Bake uncovered for 25 minutes in a 350o oven.
  • For crisp peppers, omit precooking in boiling water.
