Stuffed Pepper Cups
Ingredients
- 6 medium green bell peppers
- 1 lb ground beef
- .33 cup chopped onion
- 2 cups stewed tomatoes
- 1.5 cup cooked Cajun Country Rice
- 1 tbsp Worcestershire sauce
- 1.5 cup shredded cheddar cheese (separated)
- salt & pepper
Instructions
- Cut green peppers in half lengthwise. Remove top stem, seeds and membranes. Boil pepper cups in boiling salted water for 5 minutes, drain and set aside.
- Brown ground meat and onion.
- Add tomatoes, Cajun Country Rice, Worcestershire sauce, 1 cup cheese and salt and pepper to taste.
- Cook about 5 minutes until mixture is hot and cheese is melted.
- Stuff pepper cups with rice mixture, place in a 9 x 13 casserole dish and sprinkle pepper cups with the remaining ½ cup cheese.
- Bake uncovered for 25 minutes in a 350o oven.
- For crisp peppers, omit precooking in boiling water.
