Stuffed Pepper Cups
medium green bell peppers
cooked Cajun Country Rice
shredded cheddar cheese (separated)
salt & pepper
Cut green peppers in half lengthwise. Remove top stem, seeds and membranes. Boil pepper cups in boiling salted water for 5 minutes, drain and set aside.
Brown ground meat and onion.
Add tomatoes, Cajun Country Rice, Worcestershire sauce, 1 cup cheese and salt and pepper to taste.
Cook about 5 minutes until mixture is hot and cheese is melted.
Stuff pepper cups with rice mixture, place in a 9 x 13 casserole dish and sprinkle pepper cups with the remaining ½ cup cheese.
Bake uncovered for 25 minutes in a 350o oven.
For crisp peppers, omit precooking in boiling water.
