1 1/2lbsboneless, skinless chicken breast or tenders, cut into 1" pieces

your favorite brand of seasoning, to taste
1cupCajun Country Medium Grain Rice
1 1/4cupheavy whipping cream
1 2/3cupchicken broth, divided as noted
2cupsbroccoli florets
14ozshredded cheddar cheese
1/2cuppanko breadcrumbs
Instructions
Preheat oven to 350 degrees.
Season chicken with your preferred brand of seasoning.
In a large oven-safe skillet over medium-high heat, heat oil. Add onion and cook, stirring until soft, approximately 5 minutes.
Add garlic and cook until fragrant, 1 minute more.
Add chicken and season with salt and pepper.
Cook while stirring occasionally for about 6 minutes more, or until chicken is golden and cooked through.
Stir in rice, heavy cream and 1 cup of the broth. Bring to a simmer and cook until rice is tender, about 20-30 minutes. Add remaining 1 2/3 cups broth, broccoli and 10 oz of cheddar cheese, and cook until broccoli is tender and cheese is melted, about 10 minutes.
Sprinkle chicken mixture with remaining cheese and bread crumbs, and season with salt and pepper. Bake for 15 minutes or until golden and crispy.
