Brown Rice and Chicken Lettuce Wraps

Our lettuce wraps are delicious and refreshing! Try them for your next Asian dinner.
  • Lettuce Wrap ingredients:
  • 4 cups Cajun Country Brown Rice, cooked
  • 3 T. vegetable oil
  • 2 lb. Chicken breasts
  • 2 cups water chestnuts, diced
  • 1 1/3 cup mushrooms, diced
  • 4 cloves minced garlic
  • 1/4 cup chopped onions
  • 12 iceberg lettuce leaves
  • Stir Fry Sauce ingredients:
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1 1/2 teaspoon rice vinegar
  • Special Sauce ingredients:
  • 1/4 cup sugar
  • 1/2 cup water
  • 2 T. soy sauce
  • 2 T. rice vinegar
  • 2 T. ketchup
  • 1 T. lemon juice
  • 1/8 teaspoon sesame oil
  • 1 T. hot Asian mustard
  • 2 teaspoons red chile paste
  1. “Special Sauce”:
  2. Mix the sugar in the water until it dissolves.
  3. Add the other ingredients and mix well.
  4. Refrigerate until ready to serve.
  5. “Stir Fry Sauce”:
  6. Mix all ingredients in a small bowl.
  7. “Letttuce Wraps”
  8. Bring the oil to high heat in a large saute pan.
  9. Add chicken breasts and saute 5 minutes on each side.
  10. Remove chicken from pan to cool.
  11. Keep the oil hot and add water chestnuts, mushrooms, garlic and onions to the pan.
  12. Dice the chicken and add back to the pan.
  13. Add Cajun Country Brown Rice and stir to mix.
  14. Add “Stir Fry Sauce” to the pan and saute for a few minutes.
  15. Serve in the lettuce leaf cups.
  16. Top with the “Special Sauce”:
