Crawfish Casserole

An easy to make dish that’s always a crowd pleaser. Shrimp can be substituted for the crawfish tails.

Ingredients

  • 2 cups cooked Cajun Country Rice, Any Variety
  • 1 stick butter
  • 3 whole onions, chopped
  • 1 cup chopped bell pepper
  • 1 cup chopped celery
  • 1 can cream of mushroom soup
  • 1 can cheddar cheese soup
  • 1 lb crawfish tails
  • 4 oz. jar of pimento
  • 2 Tbsp green onions
  • 1 cup bread crumbs

Instructions

  • Preheat oven to 350 degrees.
  • Sauté vegetables in butter until clear.
  • Add crawfish and cook until crawfish are almost done.
  • Add remaining ingredients.
  • Top with breadcrumbs.
  • Bake at 350 degrees for 40 minutes.
