Rice Cooker Crawfish Jambalaya

Ingredients:

  • 2 cups uncooked Cajun Country Rice
  • 1 can of beef broth (10 ½ oz can)
  • 1 medium onion – chopped
  • 1 medium bell pepper – chopped
  • 1-2 T. diced jalapeño pepper (fresh or pickled)
  • 4 oz. fresh mushrooms, chopped
  • 1 stick butter
  • 1 lb Louisiana crawfish tails
  • 1 tsp. salt
Instructions:
  1. Place all ingredients in rice cooker. If using brown rice, add 1 cup water.
  2. Turn rice cooker on to “cook” cycle. When cycle is done, keep on “warm” for ½ hour.
